| Preparation of the bread fruit croquettes |
Peel the fruit with bread. Cut it in districts. Withdraw the heart and make cook the pieces in citronne and slightly salted water.
Drain the pieces of fruit with bread and make slightly desiccate them with the furnace. Pass the pieces of fruit to bread to the vegetable mill. Add the butter and two egg yolks. Mix. Rectify the seasoning so necessary.
In three different containers, pour the flour, whole eggs beaten and the melba toasts crushed. Form the croquettes and pass them in the flour, eggs, then in the melba toasts. In a frying pan containing of hot oil, let gild the croquettes. Withdraw them, then deposit them on an absorbing paper. Be useful hot.
