Net of fish to sauce of coriandre

4 people
Preparation: 30 min
Cooking: 25 min approximately

Ingredients:

250g of white semolina or cornstarch
of manioc (in the African or West-Indian food)
4 beautiful quite ripe tomatos
1 small soft onion
1/2 green West-Indian pepper
sheets of 1 small bouquet of coriandre
juice of 1/2 green lemon
1 cuil. with oil soup
750 G of fish nets
with firm flesh
1cuill. with paprika coffee
100 G of butter
salt, pepper of the mill

Preparation of your fish net:


In a pan, water the white cornstarch or the manioc with salted cool water, until obtaining a mixture of the consistency of a pancake batter. let rest.

1) Peel tomatos after to have plunged them 30 seconds in ebullient water. Eppinez them and crush them with the knife very finely, then pour them in a bowl.
Finely chop onion, pepper and the coriandre; add them to tomatos with the most green lemon and paprika. Salt, pepper.

2) Oil a large bowl, a small round salad bowl or a Charlotte mould. To pose on average fire the pan containing the cornstarch, which must have thickened.

3) Turn with a spatula and carry to boiling.
Lower fire and make cook 10-15 min approximately unceasingly to be
